So, in an effort to thwart the effects on my body from my last indulgent recipe for Loaded Baked Potato Soup, I am opting to share a recipe that is on the lighter and healthier side to start this week off. This also comes on the heels of my recent mission to cleanse the body by reverting to those foods full of fibers, grains, and vitamins. I am feeling so much more energetic already and highly recommend it to you all.

So, to keep things honest, this is actually a recipe that I snagged from TheKitchn.com, one of my favorite inspirational cooking sites. It sounds so delicious and fulfilling that I had to share. Not only is it healthy, but the recipe for this Garlic Miso Dressing sounds out-of -this-world and a great option for other salads, as a condiment for sandwiches and wraps…heck, take a bath in it if you want to get crazy. Hope you enjoy as much as I do! (The dressing that is, not the garlic miso bath.)

Brown Rice Salad with Apples, Walnuts, Peas with Garlic Miso Dressing

Ingredients

Main ingredients

  • 1 cup brown rice
  • 3/4 cups frozen peas
  • 1 apple (diced into 1/2 inch pieces)
  • 1/4 cup dried cherries (roughly chopped)
  • 1 cup walnuts (roughly chopped)
  • 1 bunch chives (finely chopped)

For the dressing

  • 2 Cloves garlic (minced)
  • 1 tablespoon agave syrup
  • 1 teaspoon yellow miso paste
  • 2 Tablespoons canola oil
  • 2 Tablespoons balsamic vinegar
  • 4 Tablespoons sesame seeds

Directions

Step 1
Cook the brown rice in about two cups of simmering water until tender according to package directions. Fluff and cool to room temperature.
Step 2
Microwave the frozen peas for 1 minute to thaw. Combine the peas, apple, cherries, walnuts, chives, and cooled rice in a large bowl.
Step 3
Whisk together the ingredients for the dressing. Stir the dressing into the rice mix until all the ingredients are coated.
Step 4
Garnish with extra chives and sesame seeds. If you have time, allow rice to rest for at least eight hours or overnight for flavors to come together.
