Recipe: Rosie’s Chicken Stew
Summary: A tasty blend of slow simmered chicken, brown rice and vegetables for a satisfying, well rounded meal!
Ingredients
Instructions
- Place chicken pieces in a slow cooker pot on low for 2 hours. Cover with cold water (5 -6 cups-can also sub chicken broth for all or some).
- After 2 hours, add vegetables. Cover and simmer on low heat for 2 more hours or until the chicken becomes tender.
- Cook rice separately.
- Remove soup from heat. Pull the chicken meat off the bone ( if will practically fall off), discard bones. Return shredded pieces to pot. Stir well. Let cool.
- Put all in a large mixing bowl…mix rice in. Form portion size patties or balls and put each into a small baggy. Put baggies in large freezer bag and freeze for future dinners.
BONE Appetit!
