Well, here it is! The second installment of Rosie’s doggie menu, approved in full by her refined canine palate. I hope your furry friends enjoy! Oh, and in case you’re wondering based on the picture I have provided, the answer is yes…Rosie does eat with chopsticks. Would you expect anything less from a pup with such high cuisine standards?!

Recipe: Rosie’s Chicken Stew

Summary: A tasty blend of slow simmered chicken, brown rice and vegetables for a satisfying, well rounded meal!

Ingredients

  • 2 chicken pieces (breasts, thighs, whatever’s preferable-or on sale!)
  • 2 cups of frozen mixed vegetables
  • 2 cups brown rice

Instructions

  1. Place chicken pieces in a slow cooker pot on low for 2 hours. Cover with cold water (5 -6 cups-can also sub chicken broth for all or some).
  2. After 2 hours, add vegetables. Cover and simmer on low heat for 2 more hours or until the chicken becomes tender.
  3. Cook rice separately.
  4. Remove soup from heat. Pull the chicken meat off the bone ( if will practically fall off), discard bones. Return shredded pieces to pot. Stir well. Let cool.
  5. Put all in a large mixing bowl…mix rice in. Form portion size patties or balls and put each into a small baggy. Put baggies in large freezer bag and freeze for future dinners.

BONE Appetit!
